Roasted Chicken

Ingredients:
1 Whole Chicken
8-9 Gold Potatoes
5 Tomatoes
6 TBSP of Salted Butter
1 Lemon
3 Cloves of Garlic
2 TSP of Rosemary
1 TSP of Smoked Paprika
1 TSP of Salt
1 TSP of Black Pepper
1 TSP of Onion Powder
1 TSP of Ancho Chile
1 TBSP of Olive Oil
Steps:
Pre-heat the oven with the Dutch Oven in it to 450F or 233C.
Rinse Chicken in Water (Optional).
Into a bowl or mortar and pestle, squeeze lemon juice and mash 4 TBSP of Butter with the Garlic, Rosemary, Smoked Paprika, Salt, Black Pepper, Onion Powder, and Ancho Chile until you form a liquid paste.
On a separate pan, rub the paste made from step 3 into the outside top of the chicken and add the remainder 2 TBSP of Butter into the cavity of the chicken.
Once the Dutch oven is hot and ready, carefully stick the whole chicken into the Dutch oven, add whole tomatoes and potatoes into it and close the lid.
Cook the chicken with the lid closed for 1 hour and 15 minutes, check internal temp, and make sure its at 165F or 74C
After the time has passed, pull out the Dutch oven and remove the lid. Stick the chicken back in the oven without the lid for 20 minutes or until golden.
Pull chicken out and enjoy!
