(These next dough steps sometimes are a bit controversial to some pizza aficionados due to the process, but there is a reason behind the madness, this is a traditional Italian style of making Neapolitan Pizza Dough.)

Dough Steps:

  1. Add all the water into a bowl and add the salt, stir the salt until it is fully dissolved, this is very important.

  2. Add about 1/4 cup of Flour or about 10% of the entire flour, stir the flour into the mixture and it will be soupy much like a pancake mixture.

  3. Add all the yeast, mix it, let it sit for about 5-7 minutes.

  4. Begin to add the rest of the flour little by little and mix it in until you no longer have any flour left.

  5. Mix or knead until the consistency is just right, not too watery, not too hard, and not too sticky.

  6. Once you have the dough ball, let it rest on a tray for about 2 hours and cover it with a damp towel making contact. The damp towel is so that the dough ball does not form skin on top of it, so that it keeps it moist.

  7. Once the 2 hours have lapsed cut the dough ball into 2 dough balls, and proceed to assemble your pizza.

Pizza Sauce Steps:

  1. In a blender, add the entire can of Cento peeled tomatoes alongside the tomato paste, and 1 TBSP of basil, and 2 TSP of oregano, blend it up.

  2. Pour the blended sauce into a pan and bring to a temperature of 180F or 82C and let it simmer at that temperature for about 10 minutes until it thickens up a bit.

  3. After it is thickened up you can pour into a container for later use during pizza assembly.

Pizza Assembly:

  1. Begin to spread out your dough balls and form a pizza shape, take your time, and get the right stretch and size you are looking for.

  2. Place your pizza dough in a pan, make sure to oil the bottom if the pan is not a non stick pan.

  3. Layer the pizza sauce evenly, make sure it is not too much pizza sauce.

  4. Add your mozzarella cheese and toppings and assemble the pizza.

  5. bake in the oven at 475 degrees for 8 minutes until crust is golden, you will see the cheese breathe, this is normal.

  6. Take it out of the oven let it sit for 5 minutes cut up and enjoy.
